Smoked Tomato Original

(total cook time 2 hours 10 minutes)

Ingredients for 10 servings

Fresh tomatoes (1.5-lbs., 0.7-kgs)

The Spice

Salt – 3 tablespoons

The Heat

Use Hickory wood chips for smoking.

Method

Turn an electric smoker on and set the time to 165°F (74°C).

Cut the tomatoes into halves then discard the seeds and the core.

Season the tomatoes with salt and once the smoker has reached the desired temperature, arrange the halved tomatoes on the smoker’s rack with the skin side up.

Smoke the tomatoes until pliable then remove from the smoker.

Serve and enjoy the smoked tomatoes with a cup of cheesy dip.
